Creamy Beer Soup with 2 year Old Bothwell Smoked Cheddar

Serve: 4-6
Ingredients :
2 tablespoons butter
2 medium onions, finely chopped
1 clove garlic, minced
3 tablespoons flour
2 bottles pale ale ( approx. 660 ml.)
2 cups whipped cream
3/4 cup chicken stock
300 g Bothwell 2 year old smoked cheddar cheese
salt and pepper
chopped chives to garnish


Instructions :
Melt butter in a heavy bottomed pot over gentle heat. Cook onions and garlic until soft. Add flour and stir for 2 minutes. Add beer, pouring at an angle to avoid frothing while strirring constantly. Add cream and stock and simmer for 45 minutes stiring often. Switch to low heat and gradually add grated cheese stirring constantly until all of the cheese is melted. Season to taste with salt and pepper. Sprinkle with chives before serving. Caution: never boil the soup once the cheese is added.
