Red Sicilian Goat Cheese Pesto

Ingredients :
Menù Soleggiati Tomatoes.......150 Gr
Basil Pesto.................................50 Gr
Seedless Black Olives.................60 Gr
Extra Virgin Olive Oil..................20 Gr
Goat Cheese...............................50 Gr
Heavy Cream (optional)..............70 Gr
Linguini Pasta............................300 Gr
Instructions :
With a Blender mix the Soleggiati tomatoes with the Extra Virgin Olive Oil and some oil from the Soleggiati Tomato. Once fine mixed add the Basil Pesto and the Goat cheese previously crumbled and mix with a wisk. Adjust in salt & pepper. Thin slice the Black Olives and add it to the mixture. Cook the Linguini Pasta in aboundant salted boiling water, once "al Dente" drain the pasta and mix it with the previously made Pesto. If needed add a little cream.
Serve Hot.
