Spinach Salad with Cranberry Goats Cheese

Ingredients :
1 tsp (5 mL) butter
1 red onion, thinly sliced
8 cups (2 L) baby spinach, washed
2 pears, peeled and diced
salt and freshly ground pepper
1 pkg (300g) Celebrity International goat cheese with cranberries, crumbled
3 tbsp (45 mL) balsamic vinegar
3 tbsp (45 mL) extra virgin olive oil



Prep Time: 10 minutes
Cook Time: 5 minutes


Instructions :
1. Sauté onions with butter in a frying pan until soft and golden brown (about 5 minutes).
2. Toss together spinach, pears and sautéed onions. Season with salt and pepper.
3. Divide spinach mixture between 6 salad plates.
4. Top each with the crumbled goats cheese.
5. Just before serving drizzle oil and vinegar over each salad.
