A seasonal cheese, this limited availability product is only produced in the summer. Beemster's world famous milk becomes even more coveted during the last two weeks of March. The milk taken from the Beemster cows during this period is the creamiest milk of the year. This is the only milk used to create Graskaas, an exceptional Gouda-type cheese enrobed in a vibrant, green rind. During the limited "first grazing" period, enough milk is collected to craft just 2,000 wheels of Graskaas; only half of which are exported to the US. Made in the beginning of April and aged for one month, the recipe for Graskaas dates back to 1901.

The cheese is the same secret recipe from the Beemster coop that is hand crafted to make Beemster Classic and XO. Mature for 5 months.

 

Beemster Classic

Beemster Classic is matured for no less than 18 months to ensure a wonderfully complex taste. The beautiful color of this cheese instantly reminds you of Carmel. Beemster Classic is the perfect age for any kind of cheese connoisseur to enjoy. One can enjoy Classic on a lunch sandwich in grade school or with fine wines at a dinner party. Most people prefer to savor Classic's only with a glass of wine, as not to interrupt the multitude of flavors. Other people prefer Beemster Classic with their morning coffee. No matter how you prefer to enjoy it, we guarantee Beemster Classic to never disappoint.

 

Beemster XO

Beemster XO is matured for 26 months making it Beemster's oldest cheese. Many people see 3-5 year old cheeses in stores and ask us why we do not make an older product. Once you have tasted Beemster XO you will see the answer is quite simple. As a cheese matures the flavors one tastes in the cheese expands. As this process happens moisture also exits the cheese, thus leaving the cheese tasting crumbly and granular in one's mouth. Because of Beemster's unique milk, XO is able to obtain one of the widest flavor ranges possible in only 26 months and still retains its smooth and creamy taste. Beemster XO is wonderful with Port wines, as well as sweet whites, such as a Riesling. XO can also be grated and used as a wonderful alternative to Parmesan for pastas.

 

Beemster Vlaskaas

Beemster Vlaskaas is the newest addition to Beemster's line of Premium Gourmet Dutch Cheeses; however, is the oldest cheese recipe with the group of cheeses. When translated Vlaskaas mean Flax cheese. This delightfully sweet and creamy cheese was made only during the harvest festival. It was soon decided that after generations of rest it was time for Vlaskaas to live again!

 

Beemster Lite

New Beemster Lite Mature is the perfect alternative for cheese lovers who seek a true gourmet cheese. Beemster's philosophy has always been to bring the best possible taste to every consumer. Lite Matured achieves a superb taste with 33% less fat than an average "Gouda type" cheese.

 

Beemster Master’s Choice

Beemster Master’s Choice – NEW - LIMITED EDITION!

In the modern market, cheesemakers often try to come up with the “next big cheese” and crowd the shelves with trendy new items. Beemster does just the opposite with Master’s Choice; it goes back in time to create a “new” cheese out of an old recipe.

Traditionally, Master’s Choice was a special yearly cheese. In the olden days, there was always a milk shortage in the winter when the cows gave birth. As responsible mothers, the cows gave their milk to their calves instead of to the hungry, cheese-deprived Dutchmen.

The cheesemakers of Beemster found a way to enjoy their milky summer cheese all winter long. Through a special recipe, fine milk, and extra washing of curds, a cheese was crafted that would mature for a longer time. The result was a cheese with a broad profile. The flavors develop an aged Dutch character, but the cheese is softer and creamier on the palate due to the extra washing.

After at least a year, the Master Cheesemaker, Pieter ter Beek selects the wheels that meet his standards, hence the name Master’s Choice.

Master’s Choice pairs well with Rioja, Pinot Noir, and Bordeaux. Get it while you can!
