Asiago
Asiago meaning "fresh" derives its name from a small town in northern Italy. Asiago cheese has a mild flavour and soft texture. In Wisconsin, cheese makers age Asiago to develop sharper flavours. Asiago resembles a cross between a sharp, white Cheddar and Parmesan. Aged Asiago is, however, more crumbly. Zerto Asiago is naturally aged for a minimum of six months.
