Goats Cheese Bruschetta with Cranberries & Pecans


Serving : 12 Slices
Ingredients :
1/2 baguette, sliced into 12 rounds
1 clove garlic, halved
12 basil leaves, washed
2 tomatoes, thinly sliced
1/3 cup (75g) chopped pecans
1 pkg (300g) Celebrity International goat cheese with cranberries, sliced


Prep Time: 10 minutes
Cook Time: 5 minutes


Instructions :
1. Arrange the baguette slices on a baking sheet and place under the broiler for 2 minutes or until golden brown.
2. With the cut side of the garlic clove rub onto the toasted baguette slices.
3. Place one basil leaf, one slice of tomato onto each baguette slice.
4. Top each with chopped pecans and a slice of goats cheese.
5. Place back under the broiler for another minute or until warm and the goats cheese is soft.
6. Serve warm as an hors d'oeuvre.


Recommended Wine: Chablis


Chocolate Cranberry Cheese Squares


Serving : 16 (2"x2" squares)
Ingredients :
1 pkg brownie mix or your favourite brownie recipe
1 pkg (300g) Celebrity International goat cheese with cranberries, crumbled
1/3 cup (2.5 fl. oz) milk
1 tsp (5 mL) vanilla


Prep Time: 10 minutes
Cook Time: 30 minutes


Instructions :
1. Mix together the goats cheese, milk and vanilla until smooth.
2. Make brownie mix according to directions on package.
3. Grease the bottom of and 8” x 8” (20.3cm x 20.3cm) baking dish.
4. Pour brownie mixture into prepared baking dish.
5. Drizzle the cheese mixture over the brownie mixture and swirl into the brownie mixture with a knife.
6. Bake as directed on brownie package, about 30 minutes.
7. Let cool and slice into squares to serve.



Prosciutto Wrapped Chicken stuffed with Cranberry Goat Cheese


Serving : 4
Ingredients :
4 boneless chicken breasts, pounded thin
1 pkg (300g) Celebrity International goat cheese with cranberries, crumbled
2 garlic cloves, minced
1/4 cup (60mL) Parmesan cheese, grated
salt and freshly ground pepper, to taste
8 slices Prosciutto
3 tablespoons (45mL) olive oil


Prep Time: 10 minutes
Cook Time: 35 minutes


Instructions :
1. Place the chicken breasts on a flat surface, pound thin, and season with salt and pepper.
2. Combine crumbled goats cheese with parmesan and garlic in a bowl.
3. Spoon an even layer of cheese mixture over chicken breasts.
4. Beginning at the short tapered end, roll up each chicken breast like a jellyroll. Wrap 2 slices of the prosciutto around each roll and secure with a toothpick if necessary. Drizzle a little olive oil over each roll.
5. Wrap each roll in foil, sealing the ends to retain moisture. Bake in a 350?C oven for 35 minutes or until chicken is cooked through and juices run clear.
6. Serve with your favourite rice or risotto.

Spinach Salad with Cranberry Goats Cheese


Serving : 6
Ingredients :
1 tsp (5 mL) butter
1 red onion, thinly sliced
8 cups (2 L) baby spinach, washed
2 pears, peeled and diced
salt and freshly ground pepper
1 pkg (300g) Celebrity International goat cheese with cranberries, crumbled
3 tbsp (45 mL) balsamic vinegar
3 tbsp (45 mL) extra virgin olive oil



Prep Time: 10 minutes
Cook Time: 5 minutes


Instructions :
1. Sauté onions with butter in a frying pan until soft and golden brown (about 5 minutes).
2. Toss together spinach, pears and sautéed onions. Season with salt and pepper.
3. Divide spinach mixture between 6 salad plates.
4. Top each with the crumbled goats cheese.
5. Just before serving drizzle oil and vinegar over each salad.
